Sweet potato

The twins really like sweet potatoes but I don't know what to do about the fibers! I still have to puree them because the kids gag on the fibers if I fork-mash them.

  1. I would roast them at 400 for about 40 minutes and then, once a bit cooled, cut them into bite sized cubes. I didn't notice the fibers to be a problem and my kids devoured it!

  2. Our girls love sweet potatoes. I just peel them and dice them into 1" cubes, and then boil them for about 10 minutes until tender. They eat them with their hands.

    I have a crock-pot recipe I made a few months ago. It was sweet potatoes with a Granny Smith apple and some spices. I thought it was too sweet, but my husband and girls loved it. I'll be glad to send it to you if you're interested.

  4. Of course Mandy! cut them up before cooking - why didn't I think of that? That would break up the fibers - I do that for eggplant. I guess I still didn't replenish the grey matter that the twins took from me!

    Thanks for the tip Nicole - I should start using the oven more but it's just so convenient to throw everything in the pressure cooker each morning and be done with.
