10 grain Muffins

The recipe is for 10 grain muffins but I don't have a muffin pan yet. So I improvised and substituted. I used whole wheat flour instead of unbleached flour and two small eggs instead of one XL egg.

I baked the whole batter in a square cake pan and cut the cooled 'cake' into 'fingers.' These 10 grain muffin-cake-fingers freeze and thaw (in a toaster oven) beautifully. The twins love them and some days it makes up their entire breakfast because they refuse to eat anything else.

    I don't think I've seen this 10-grain cereal in the stores...is it by the oatmeal? I hope I can find it, as I would like to try this recipe. I'm always looking for ways to get more grains in the girls' diet. Thanks! :)

  2. Hi Mandy, It's usually in the cereal isle near the hot cereals. Bob's Red Mill also make 5, 6, 7 and 8 grain hot cereals. Depending on the store I also find it in 'natural' or 'whole' foods isle.
